- Chicken breasts – Halve chicken (chicken will cook a lot faster this way). Mix together soy sauce, lime juice, brown sugar, and oil. Cover chicken breasts in marinade for at least 30 minutes.
- Grill on top rack, about 10 minutes on each side. Top with cheese and cook until melted, about one to two minutes.
- Serve over Spanish rice and top with guacamole.
