Tex-Mex Quesadilla

Ingredients
  • 1 tbsp canola oil
  • 2 cup chicken breasts (cooked and diced)
  • 1/2 yellow onion
  • 1 garlic clove
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp kosher salt
  • 1 cup black beens
  • 1 cup corn
  • 1 green bell pepper (diced)
  • 1 roma tomato (diced finely and dried on paper towel)
  • 1/2 cup chedder cheese (shredded)
  • 2 tbsp cilantro (chopped)
  • 6 tortillas
Instructions
  1. Add the canola oil to skillet on high heat with the chicken, onion, garlic, cumin, chili powder and kosher salt.
  2. Stir and cook for 1 minute before turning off the heat
  3. Add in the corn, black beans, bell pepper, tomato, cheddar cheese and cilantro. Stir together.
  4. Make quesadilla with mixture, brown on your desired cooking surface.
