Jamaican Jerk Chicken

Ingredients
  • 2 to 3 lb chicken (bone-in)
  • 4 scallions (fresh stalks, minced)
  • 8 garlic cloves (minced)
  • 2 Jalapeño chili peppers (stemmed and chopped)
  • 4 tbsp soy sauce
  • 2 tbsp oil (olive, peanut or vegetable oil)
  • 1 lime (juiced)
  • 1/4 cup brown sugar
  • 4 tsp Jamaican allspice
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 2 tsp ground nutmeg
  • 2 tsp ground cloves
  • 2 tbsp dried thyme
  • 2 tsp black pepper
  • 4 tsp salt
Instructions
  1. Finely chop scallions, 8 cloves of garlic and 2 de-seeded peppers. Add to a large bowl.
  2. Into the same bowl, stir in brown sugar, spices, dried thyme, soy sauce, oil, juice of one lime.
  3. Add chicken pieces and toss together until fully coated in the marinade mixture.
  4. Cover bowl with plastic wrap and marinate the chicken in the fridge for at least 3 hours or overnight.
  5. When ready to cook, grill at 350°F and cook chicken for 45-55 minutes.
