Easy Homemade Granola

Ingredients
  • 3 cup old fashioned oats (not quick oats)
  • 1 cup coconut (shredded)
  • 1 cup sliced almonds (or any other nut you prefer)
  • 3 tbsp honey (or real maple syrup)
  • 1/4 cup brown sugar
  • 1/4 cup coconut oil (or extra virgin olive oil)
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 cup dried cranberries (or any other dried fruit)
Instructions
  1. Preheat oven to 350 degrees.
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. Combine the oats, shredded coconut, and almonds in a large bowl.
  4. In a small bowl, combine the honey, brown sugar, oil, cinnamon, and salt.
  5. Microwave on high heat for 30 seconds. Stir to combine.
  6. Add honey mixture to the oat mixture and stir to combine.
  7. Spread on a prepared baking sheet and bake for 20 to 25 minutes or until its golden brown, stirring evenly every 7 to 8 minutes.
  8. Let the granola dry completely, stirring occasionally.
  9. Stir in dried cranberries.
  10. Store granola in an airtight container for up to two weeks.
