Creamy White Chili

Ingredients
  • 1 lb chicken breasts (boneless, skinless, cut into 1/2-inch cubes)
  • 1 onion (medium)
  • 1 1/2 tsp garlic powder
  • 1 tbsp vegetable oil
  • 2 cans (15-1/2 oz each) great northern beans (rinsed and drained)
  • 1 can (14 1/2 oz) chicken broth
  • 2 cans (4 oz each) chopped green chiles
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp pepper
  • 1/4 tsp cayenne pepper
  • 1 cup sour cream
  • 1/2 cup heavy whipping cream
  • Tortill chips (optional)
  • shredded cheese (optional)
  • sliced seeded jalapeno pepper (optional)
Instructions
  1. In a large saucepan, saute the chicken, onion and garlic powder in oil until chicken is no longer pink.
  2. Add the beans, broth, chiles and seasonings. Bring to a boil.
  3. Reduce heat; simmer, uncovered, for 30 minutes.
  4. Remove from the heat; stir in sour cream and cream. If desired, top with tortilla chips, cheese and jalapenos.
Recipe Notes

Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.
