Coconut Rice and Beans

Ingredients
  • 1 cup long grain rice
  • 1 tbsp oil or butter
  • 1 shallot (chopped)
  • 1 garlic (clove)
  • 3/4 cup coconut milk
  • 1 cup water
  • 1 pinch nutmeg
  • 1 tsp salt
  • 15 oz black beans (rinsed and drained)
Instructions
  1. While chicken is cooking start on the rice.
  2. Add butter or oil in a small saucepan over medium heat.
  3. Stir in chopped shallot and garlic, cook until soft, about 3 minutes.
  4. Stir in rice then pour in the coconut milk and water.
  5. Season with nutmeg and salt.
  6. Bring to a boil, then reduce heat to medium-low. Cover and simmer until the liquid has been absorbed and rice is tender, about 18 minutes.
  7. Stir in the black beans and cook for a few minutes until hot.
